Todd is a 5th Generation Native to Ybor City with the passion for great food in his blood. From the days of watching his grandmother spend all day making her famous spaghetti sauce to now assisting his Father, Chef Anthony and Rib Dog  (John Verville) here at the Rolling Pin, Todd is ready to share his passion for great food and simple recipes for entertaining.

Todd has been cooking dishes for many years using family recipes handed down from 6 generations.  “Learning to cook Ybor City Spanish Cuisine from my family is a challenge considering they are my biggest critics.”  He feels these family experiences and infusions of foods and flavors have significantly influenced his skills.

“After helping Executive Chef Tony Bruno (The Living Room in Dunedin FL) and local restaurateur Gordon Davis (The original Ceviche Tapas Bar and Restaurant in Tampa) open Smoke BBQ and Grill in Tampa, I feel my experience working in a fast paced restaurant has given me a better perspective of how to incorporate simple recipes to help bring the family back to the dinner table.”

Todd works for Air Culinaire Worldwide, a global private in-flight catering company, and in his spare time enjoys being a father to his 3 children and soaking up the sun at the local beaches.
