Josh Tahan, Egghead

Josh Tahan was raised by a single, school teacher mother up in North Smithfield, RI who he says, “is very committed to her students.” He tells us that his mom always volunteered at her school to help those in her community and he would love when she would work late because that meant he could help start dinner. Although it was small stuff – chopping peppers, draining stewed tomatoes from the can, browning up some ground beef – Josh says that it felt like he was pitching in and helping out the family. He credits those experiences as teaching him at a young age just how important family dinners are as every minute they spent around the table was precious. Since then, he has gone on to become a Big Green Egg expert, and part of his success can be attributed to what he practices himself and teaches others: mise en place (everything in place), using good quality knives kept at peak performance by a good quality sharpener so that they “do all the work for you,” and keeping it simple because often the simplest ingredients and preparations are the best.
